This recipe is made with fresh leaves
- the spine of the leaf is removed - the you slice the leaf very very thinly or you put them in a mixer and grind them to a fine dust.
I saw this recipe with kaffir lime fruit but the taste is not as subtle.

The lowest dose gives the best result for unfiltered panna cotta.
The highest dose is alright if the thinly sliced leaf is only left to infuse a few minutes in the mixture and then filtered before its cooled.
In many cases sliced Kaffir lime leaves are made into a syrup then poured over the panna cotta, easy option.
As for the presentation of you Kaffir lime leaf panna cotta, the classics are passion fruit or coconut.
