It's the kaffir lime (Makrut) leaf that's used in cooking. Its flavor is sweeter, more balanced and less pungent than the zest of the fruit and it's exactly the same for kaffir lime essential oils.
In the spring we thin new shoots to strengthen the trees and prune them to improve the structure of the trees. That means lots of young and old leaves that produce an excellent essential oil: the kaffir lime petitgrain.
Interesting to use in perfumes, drinks or kombucha.
